Corn Sticks and Muffin Mix

You’re probably like the rest of us while at the market you reached for a quick corn muffin mix for convenience. I know I have too, but not anymore this mix is so easy to make and quickly to bakes up in a few minutes time. And your family will love it!

Corn Sticks and Muffin Mix

  • 2cup corn meal (flour)
  • 1cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking soda
  • 1teaspoon salt
  • 2 tablespoons melted butter or vegetable oil
  • 1 egg
  • 1/2 to 3/4 cup buttermilk, whole, 2% or other

Combine first 5 ingredients in a bowl, mix well.

In a separate bowl whisk in together egg, milk and butter.    Combine mix with egg and milk, mixing just until flour is wet. If you’re using a cast iron corn stick or muffin pan carefully remove it for the preheated oven and spray with oil.

To make Corn Muffins, preheat oven to 400°F spray muffin pan with non-stick cooking spray.

 

Fill muffin pan 1/2 full, bake for 15-20 minutes.

  • Optional Ingredients add ins

  • 1cup grated cheddar cheese or Monterrey jack
  • 2 ounces canned chilies
  • 1cup drained chopped peppers
  • 1cup chopped onion

This recipe can be doubled or even tripled to made in bulk and divided into zip top bags for convenience. Just take out a bag and add liquid to the mix then bake.  These also freeze well and can be reheated in the oven at 350°F for 10 minutes.
