It’s summer so why not have a party just so you can make this great dip. It’s quick and easy and taste just like Buffalo wings without the bones and messy fingers. Serve it with tortilla chips and don’t forget the celery and blue cheese dressing.
If you have one of these then you probably eat as much hot sauce as we do. Which some might say is too much but can you ever really have too much hot sauce? I think not…
In a glass baking dish that has been sprayed with cooking oil. Use a fork to cream together the cream cheese and blue cheese dressing. Really you’re just mashing it together that sounds so much more fun.
In a small microwave safe bowl add the hot sauce, salt, pepper and butter. Melt for 1 to 2 minutes then whisk together and set aside.
Cut 2 chicken breast into medium coarse pieces place in a bowl. (For the chicken whenever we grill chicken I grill and extra breast or two and slice them up for salads or dip like this one. Place them in a Ziploc bag and be sure to write the date a continence on the bag and freeze. Then presto when you need chicken quick you have it just be sure to use up after about 3 months. You can also use poach chicken and freeze in the same way).
Pour the hot sauce mixture over the chicken and toss to cover the pieces.
Sprinkle half the grated cheese over the cream cheese then the coated chicken and cheese again. Place in the preheated oven and bake for 30 minutes.
Server with chips, veggie sticks and your favorite drink.
Buffalo Chicken Dip
- 2 chicken breast
- 1 – 8 oz package cream cheese softened
- 1/4 cup blue cheese salad dressing (ranch will work too)
- 1/2 cup grated cheddar cheese
- 1/2 cup grated pepper jack or Monterey jack cheese
- 1/2 cup hot sauce regular, chipotle or mild green
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
Pre heat oven to 400° degrees
spray a baking dish with cooking spray oil
Place the cream cheese and blue cheese dressing in the baking dish. With a fork mashes the cheese and cream together until well blended and spread out covering the bottom of the dish. Sprinkle half the cheese over the cream cheese. Place the hot sauce and butter in a dish and microwave for 2 minutes, whisk together set aside. Chop the chicken breast in to chunk or if hot shred with two forks. Place the chicken in a bowl and pour the hot sauce on and toss to cover all the pieces. Layer the chicken over the cheese sprinkle the remainder of the cheese over the chicken.
Bake in a preheated oven for 30 to 35 minutes.
