Okay it’s time to put on the pot of coffee and start baking for a great breakfast treat.
- 1 ½ cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- ½ teaspoons baking soda
- ½ teaspoon sea salt
- ½ cup unsalted butter (1 stick)
- 2/3 cup buttermilk or whole milk
- 1 egg
- ¼ teaspoon vanilla extract
- 2/3 cup brown sugar
- ½ cup all-purpose flour
- 4 Tablespoons unsalted butter cut into several slices
In a medium bowl add the sugar, baking powder and flour mix well. Add the butter slices and blend into flour mixture until it resembles coarse meal. Set aside until you mix the batter for the cake.
Preheat oven to 350°
8 x 8 round (if using a round pan, a spring form pan works great) or square baking pan with cooking spray oil.
For the batter in a medium to large bowl combine flour, sugar, salt, baking soda and baking powder. With a pastry blender or butter knife cut the butter in to the flour mixture until it looks like coarse crumbs. Beat the egg and milk together then add to flour mix and stir just until the flour is moist. Pour half the batter into the pan then add half the crumb topping then the remaining batter then top with the rest of the crumb.
Bake @ 350° degrees for 45 minutes to l hour checking with a tooth pick poked in the center if it comes out clean the cake is ready. If it has batter on it cook for 5 minutes more at a time until the pick comes out clean.
Let cool if you can resist for 10 minutes serve
