Corned Beef Hash

I your St. Patrick’s day dinner still hanging around and if you’re still trying to figure out what to do with your leftover corned beef this is good breakfast, lunch or even dinner fix.  Corned beef hash is filling and delicious and topped with an egg sun side up it’s hard to beat.



  • 1 medium onion
  • 4 medium potatoes
  • 1  red, orange, yellow or green bell pepper
  • 2 cups corned beef
  • 2 to 3 tablespoons bacon fat or oil
  • salt and pepper to taste

Chop the onion, potatoes, peppers and corned beef in to small cubes.  Heat a large skillet on medium to high temp add the bacon fat or oil to the skillet. Carefully add everything to the skillet  fry being sure to use a spatula to turn everything in the skillet and brown evenly.  Salt and pepper.

4 Eggs

Heat a frying lidded pan over low to medium heat.  Spray with cooking oil, when the oil looks shiny in the pan crack your egg in it cover with the lid and let cook slowly until the white has no more liquid on top but the yolk is still liquid.  Divide the hash up between 4 plates and place an egg on top of each.  Add a sprinkle of salt and pepper and serve.
