Cucumber Salad with Dill Dressing

I’ve posted before about having lots of these beauties from my garden and have we enjoyed them.  This is a quick fix recipe I love to make in the summer with fresh cucumbers.  I think just about every family has a cucumber salad recipe they rely on, on a regular basis.  It is quite versatile in that you can add or change-up the vinegar or toss in tomatoes and peppers if you like.

These beautiful purple carrots are from a packet of seeds that was supposed to be a vintage mix. That okay with us the look and taste great.

Dressing Recipe:

  • 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper
  • 1 tablespoon dill weed

Whisk together in a medium bowl and set aside.

Salad Recipe:

  • 2 English cucumbers sliced thinly
  • 1 medium red or white onion thinly sliced and ring separated.

Toss in a large bowl whisk your dressing and pour over salad let rest 15 minutes or until ready to serve.
