This salad is like a fiesta in a bowl and taste as colorful as it looks. It’s a great summer side dish or can be pair as a base for chicken or fish. You can add more jalapeño if you like it spicier or double the recipe for a crowd. Corn is at its best this time of year so why not enjoy a batch of this quick easy summer salad and if the word salad is not allowed in your house call it relish it’ll be our secret.
Grilled Corn and Black Bean Salad
1 Can Black Beans drained
2 Ears Corn on the cob grilled until lightly charred
Half of a red onion diced
1 jalapeño grilled finely diced
½ of a red bell pepper diced
1 medium diced tomato
Fist full of cilantro chopped
Salt and pepper to taste
½ teaspoon cumin
½ teaspoon Smokey paprika
½ teaspoon crushed red pepper
3 Tablespoons olive oil
Juice of 1 lime
Peel back the corn and clean off the silks then soak in a bowl of water until ready to grill. Grill corn and jalapeño until lightly charred set aside to cool. Drain the beans add to a large bowl add onions, peppers cilantro and spices. Your corn and jalapeño should be cooled enough to slice cut the corn off the cob and add it to the bowl. Dice the jalapeño add the olive oil and lime juice. Toss it all together and give it a taste to make sure the seasoning is right add more if you like and serve or chill until ready to eat.
