This creamy lemon lime slaw is a great quick easy side for your 4th of July cookout!  It creamy and with the zest of lemon and lime it’s refreshing too.  I also spiked this slaw recipe up a bit with a heaping tablespoon of chili paste.  The contrast of citrus and spice really gave it flavor.  Mine was a real crowd pleaser I’m sure your will be too!

Recipe:

  • 3 cups of cabbage thinly sliced
  • 1 large carrot grated on the large side of a box grater
  • 1 medium onion grated
  • juice of 1 lemon
  • juice of 1 lime
  • 3 Tablespoons agave nectar
  • 1 cup mayonnaise
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1 heaping Tablespoon chili paste
  • fist full of fresh cilantro coarsely chopped

Method:

In a large bowl zest the yellow and green part only of the lemon and lime.  Juice of the lemon, lime and salt, pepper, mayonnaise, chili paste and agave nectar whisk together.  Add the sliced cabbage, cilantro, grated onion and carrot to the dressing and mix well.  Let chill for at least 1 hour and enjoy.
