So here we are on Wednesday,

These will be loved by mom’s and kids alike and I’m not just talking about the ones under 3 ft tall.   Those little ones will love helping with this treat too.   I’m sure every one has that hand full of berries left over peaches the don’t want to go bad.  Don’t throw them out! Just place a larger ziplock freezer bag in the freezer and toss them it when ever you have them you’ll be surprised in no time you’ll have a bag full.    When you have 4 cups of berries or peaches or both make fruit leathers or rolls.  I have used fresh fruit to make these as well especially when the fruit is in season.

This is not a new treat but at home you control the sweetener that’s added to them and how much.  I like using honey or agave which are both used in moderation.  We can just keep it our little secret it’s okay to have a little mom secret between us moms.

This is all you need:

Pre-heat your oven to 180°

  • 4 cups fresh or frozen fruit (strawberries, blue berries, peaches and mango all work great you can also us black berries or raspberries but if you don’t like the crunch of seeds you will have to strain the berries.
  • 1/2 cup applesauce (1 of the single serve cups is 1/2 cup)
  • 1 Tablespoon honey or agave nectar
  • juice of 1 lemon ( this is to prolong shelf life and keep the colors bright)

You will need either silpats or parchment paper I like silpats mats because they don’t stick parchment works you just have to make sure to use the shiny side.  2 large baking sheets and a blender that’s it.

Place the fruit, apple sauce, honey and lemon juice in your blender.  Blend until smooth the amount of time will depend on your blenders power.  I have a blendtec blender and it takes a few pulses and its ready.  It will like a smoothie when its ready.  Pour 1/2 the fruit onto the baking sheets place in the oven for 4 to 6 hours on 180°.

Last but, not least raspberry.

The fruit will dry out and be a sheet of pliable fruit leather or rolls depending on how you cut them.  They can be rolled up like a fruit roll with waxed or parchment paper and wrapped  in plastic. I cut them into wider pieces as fruit leather and placed in plastic sandwich bags for grab and go pick me up snacks.

Enjoy,

Life’s short don’t forget to have fun and act like a kid sometimes,  you’ll thank yourself for it.
