What’s new in my kitchen for Wednesday? Blueberries are a sweet treat from nature they seem to go well with so many food, even sausage. I like adding berries to pancakes and cereal so why not try sausage! I’m happy to say it goes well with that too.
- 1 pound pork breakfast sausage (I used whole foods but Jimmy Dean works too)
- 1 cup fresh blueberries
In a large bowl add the sausage and mash it down and separate breaking the meat up loosely. Add the blueberries and gently fold them into the sausage. Ground meat is easier to handle and wont stick to your hands as easy if they are damp. Wet you hands and shake off the excess water then scoop out about a 1/2 cup handful of sausage and form into patties placing on waxed or parchment paper in a single layer. The patties can be made whatever size you like small or large. They can be frozen and taken out as you need them or cook right away. They will only keep about 2 days with the fresh blueberries in the refrigerator but will keep for 3 months in the freezer. This sausage is great along side a stack of french toast, pancakes or waffles. We’ve even had them with scrambled eggs and toast what a tasty breakfast.
