The last month of 2014 is rolling in at breakneck speed as the days seem to be flying by this year.  It was nice to a long weekend to relax and catch up on life and visit with the one that are most important to us.  Hope everyone had a wonderful Thanksgiving if you celebrate and a wonderful week in for those of you whom it was a regular day.

I haven’t given an update on Pepper pup in a while, she is now eight months old now and doing great.  But the biggest update is we have adopted a new little girl three weeks ago.  Our new addition is Blu she is an Australian Shepard Blue Merle that is 8 months old.  The only back ground we have is she was found wandering the streets and they think she may have been left when her owns moved away.  Whatever the reason we fell in love with her and were happy to take her in as part of our pack.  Needless to say Pepper has been over joyed with the addition.  They spend their days playing and chewing bones lots of walks and park visits fill their time. Our friend also have an Aussie that love to come and play with our girls and the all get along great.  We feel so fortunate to have our new addition. DSC_0148 (2) DSC_0135 (2)

Wow I want to be a dog!

Now that we are all stuffed with turkey and pumpkin pie.  It’s time to get out the Christmas decoration and start the shopping.  Unless you were brave or maybe crazy enough to brave the black Friday sales.  For me I don’t do black Friday sales ever!  That being said we prefer the holiday should be a time to get together with family and friends and enjoy the chance to catch up on the events of the year.  For those gatherings we need snacks and goodies so today’s recipe is for cracker.  The are not only great for you gatherings but also as gifts.  Their easy to make and taste great alone on a cheese tray.

Cheese cracker

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon sea-salt
  • 6 Tablespoons unsalted butter at room temperature
  • 1 8 oz  block of sharp or extra sharp cheddar cheese finely grated
  • 2 to 4 Tablespoons ice water
  • 1 egg white lightly beaten for egg wash before baking

In the bowl of a food processor add the flour, baking powder, salt and pulse until blended.  Add the butter and cheese pulse until blended.  Add 2 Tablespoons of ice water and pulse until the dough comes together.  Add remaining water only if the dough is still to dry to come together.  Divide the dough in to two pieces and wrap in plastic wrap and press into a square chill for at least 30 minutes.  Preheat your oven to 350° working with one square at a time roll the dough out to about 1/8 thick.  Cut into strips about 1 inch by 1 inch strips.  Place on a parchment paper lined baking sheet using the flat end of a wooden skewer poke a hole in the center of each square.  Brush with egg wash and bake for 14 to 16 minutes turning the baking sheet to evenly bake the cracker.  Cool crackers and store in  an air tight container for about 4 weeks.  But I they probable won’t last that long.

These are also great as food gifts or in gift baskets.
